Remove hardcoded clirr.skip=false in showcase-clirr check. This enables us to configure the clirr check in poms.

Add protobuf gen code 3.25.8 for showcase. Add a profile that enables showcase tests with 3.25.8 gen code. Add a CI check that tests showcase with the new profile.
